I will probably be afraid to eat less than three eggs for breakfast for a good while. What is so great about the Lara Briden books (specifically talking about Metabolism Repair for Women here) is that she organizes them in such a way that a reader can go directly to the section that most applies to her first (if she prefers…).
I was struggling with fatigue, light headedness, and blurry vision from low blood sugar (after major blood loss; I was breastfeeding around the clock, as well). She has a section about hypoglycemia and women and what to do.
Since then, I’ve been doubling my protein portion each meal and making sure there is fiber. I make sure there’s a little bit of carbs (for my thyroid - that’s a different Lara Briden book).
Here is what I am eating now:
Breakfast: 3 eggs and either cup of oatmeal OR mushrooms and toast
Snack (I nurse here): yogurt and granola
Lunch: tuna, toast, and greens
Snack (I nurse here too!): if I’m hungry, I eat crackers, hummus, and carrots
*to note, I’ve been much less hungry overall and sometimes skip this snack, even though I’m nursing, because I feel good and I’m just NOT HUNGRY (this is a big them of Lara Borden’s Metabolism book eating correctly so that a person is not hungry all of the time - and, it’s working ! So far…)
Dinner: Double portion chicken or salmon, broccoli and/or mushrooms; little bit of rice stir fry
Now, a cheaper way to do this would be to eat rice and beans (rice/beans makes a full protein as rice is carbs). Costa Ricans eat rice and beans with almost every meal with one additional protein of fish or chicken or eggs traditionally (I can see why it’s a Blue zone - a place where a statistically large portion of people live to be over 80).
I started this then, sadly, had to stop because it gave my baby gas pain! I will start it up again because it’s a more economical variation of this diet once my little one’s digestive system has matured more.
I am not sure if the portions I am eating right now will persist or if I’ll be able to eat the same high fiber/protein diet with small portions in the future when I’m not breastfeeding.
However, let me tell you that I will probably eat three eggs with breakfast for a really long time…
